Easy-Peasy Split Pea Soup

Ingredients

  • 7 large carrots (rainbow if available) sliced thinly
  • 1 bunch of the greens of the carrots
  • 7 celery stalks  sliced thinly
  • 1 large red onion sliced thinly
  • 4 cloves of garlic diced
  • 6 cup dry split peas (soak overnight in water and rinse)
  • 1 tbsp crushed black pepper
  • 1 tbsp Italian Seasonings 
  • 1 tbsp cumin 
  • 1 tbsp Anise

Instructions

  • Slice all vegetables and garlic. 
  • Add all ingredients into a crock-pot. 
  • Add filtered water to 3/4 of the crock-pot. 
  • Set to low (8-10-hours) 
  • Enjoy!
