Coconut Oatmeal Energy Balls

If you’re anything like me you might not be big into baking. I love to cook, but baking is a whole other story. One factor is that I follow a gluten-free and dairy-free diet since they both cause a slew of issues for me. That and the fact that most recipes have enough sugar in them to feed an entire school.

With all of that being said I decided to craft up these simple and guilt-free Coconut Oatmeal Energy Balls.
High Energy and Low Sugar
They take about 5 minutes of prep time and require just a few ingredients. You can enjoy them for breakfast or as a snack.
They are all-natural, plant-based, gluten-free, dairy-free, and no sugar added. Oh yay!
You can add things to this mixture like shredded almonds, walnuts, chia seeds, chocolate chips, raisins, or whatever you feel like! I invite you to play around with different spices too. I used sunflower butter, however, feel free to use different types of nut butter. Get creative in the kitchen by mixing and matching ideas. Whatever tickles your fancy. You do you!!
Serve with some fun tea or your favorite plant-based milk and Enjoy!
Coconut Oatmeal Energy Balls
Ingredients
- 2 Bananas
- 1/2 cup Cashew Butter
- 2 cup Old Fashioned Thick Rolled Oats
- 1 cup Finely Shredded Coconut
- 1 tsp Ground Cinnamon
- 1 tsp Nutmeg
- 1 tsp All Spice
- 1 tsp Vanilla Extract
- Coconut oil or Coconut spray to coat baking tray
Instructions
- Preheat oven to 350 degrees.
- In a bowl mash bananas completely then add oatmeal, cashew butter, 1/2-cup coconut, and seasonings. Mix well.
- Roll mixture into about 3-inch round balls using your hand.
- Add the other 1/2 cup of shredded coconut to a plate and roll each ball around so it’s covered completely with coconut.
- Spray baking tray with Coconut oil spray then add balls to it.
- Bake for 15-minutes or until firm.
