This Easy-Peasy Split Pea Soup is Delicious!
Hear me out on this, it is gluten-free, dairy-free, and vegan. Does that mean that you have to sacrifice your taste buds? Um, no way!
When everything slow cooks all day in the crock-pot the flavors unfold into a taste of Heaven. The best part about it is that there are minimal ingredients, which means you can prepare this bad boy in minutes (around 10).

Easy-Peasy Split Pea Soup
Ingredients
- 7 large carrots (rainbow if available) sliced thinly
- 1 bunch of the greens of the carrots
- 7 celery stalks sliced thinly
- 1 large red onion sliced thinly
- 4 cloves of garlic diced
- 6 cup dry split peas (soak overnight in water and rinse)
- 1 tbsp crushed black pepper
- 1 tbsp Italian Seasonings
- 1 tbsp cumin
- 1 tbsp Anise
Instructions
- Slice all vegetables and garlic.
- Add all ingredients into a crock-pot.
- Add filtered water to 3/4 of the crock-pot.
- Set to low (8-10-hours)
