Marinated Cooling Cucumbers
- 1 large cucumber sliced
- 2 tablespoons apple cider vinegar
- 2 tablespoons champagne vinegar
- 2 tablespoons coconut amino acids
- 1 tablespoon olive oil
- 1 teaspoon Sea Salt
- 1 teaspoon black pepper
- 1 teaspoon thyme
Combine ingredients in a bowl with a lid, shake well and let marinate in the fridge overnight. Serve with sliced tomatoes, lemon juice, and basil if desired.
