If you are a fan of split pea soup then you have to try the Easy-Peasy Split Pea Soup! Hear me out on this, it is gluten-free, dairy-free, and vegan. Does that mean that you have to sacrifice your taste buds? Um, no way! When everything slow cooks all day in the crock-pot the flavors unfold into a taste of Heaven. The best part about it is that there are minimal ingredients, which means you can prepare this bad boy in minutes (around 10).

Easy-Peasy Split Pea Soup
- 7 large carrots (rainbow if available)
- Carrot greens
- 7 celery stalks
- 1 large onion (purple is preferred)
- 4 cloves of garlic
- 6 cups of dry split peas (rinse first)
- 1 tablespoon of the following:
- Italian Seasonings
- Dice all vegetables and garlic.
- Add all ingredients into a crock-pot.
- Add filtered water to 3/4 of the crock-pot.
- Set to low (10-hours)
